Corn starch is a white, odourless, carbohydrate powder extracted from the endosperm of the corn kernel. Unlike corn flour, it contains no protein, fat, or fibre — just pure starch, made up of two glucose polymers, amylose and amylopectin, in a ratio that determines how the starch behaves once it meets water and heat.
On its own, corn starch is insoluble in cold water. Heated in liquid, it gelatinises — swelling into a thick, translucent paste that thickens, binds, and stabilises whatever it's added to.
